Tropical Island Salsa

This recipe was used as a topping for my Jerk Chicken Rice Bowls which you can find in my 30 Minute Meals Section. It’s also a great stand alone for chips and salsa.

Ingredients

16 oz can black beans

16 oz can pineapple pieces (size smaller than "chunks")

1/4 red onion; small diced

1/3 red bell pepper; small diced

2 Tbsp chopped cilantro

1/2 lime juice

salt to taste

Directions

Combine all ingredients; serve immediately or chill
