Trying to come up with vegan recipes for quick and easy lunchtime meals can be a little challenging if you’re not creative. I’m a newbie in the vegan space so I’ve been googling to get some ideas. This idea of chickpea “tuna” came up in my searches with great reviews. I made this recipe my own, and it really surprised me how much it reminded me of actual tunafish! I made a delicious tuna melt with this recipe and then the next day put a scoop over a fresh garden salad. Both were incredibly healthy lunch dishes you can easily throw together.
