Launch Party Chocolate Chip Cookies
I love this recipe so much that I made them as takeaway gifts for my blog's launch party! I cranked out over 300 of these bad boys, and not one was left! Everyone has their own preferences with chocolate chip cookies, but I enjoy a soft chewy middle, crisp edges, and just a hint of saltiness with the sweet. I think this recipe gives you all of that. Enjoy!
ingredients
Yields: 25 cookies (using a 1 oz cookie scoop)
1/4 cup oats
1 1/8 cup flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon cinnamon
1 stick SALTED butter
3/8 cup of brown sugar
3/8 cup of white sugar
1 teaspoon pure vanilla extract
1 egg
2 cups semi-sweet chocolate chips (I love Ghirardelli)
1/4 teaspoon lemon juice
directions
1. In a food processor (or using the "grind" feature on a blender) grind the oats until fine.
2. In a bowl combine all dry ingredients- ground oats, flour, baking soda, salt, cinnamon. Set aside
3. Using an electric mixer, cream together room temperature butter with the brown and white sugar. Blend together until the butter and sugar are whipped and airy.
4. Scrape down the sides and bottom of the bowl with your spatula, making sure everything is well mixed.
5. Add vanilla, egg, and lemon juice to mixer. Blend until combined well. Scrape sides and bottom of bowl and mix again if needed.
6. Add all dry ingredients to the butter and sugar mixture. Mix just until combined, but do not over mix now that the flour has been added, or the cookies will be tough.
7. Scoop cookies onto a baking sheet lined with parchment paper and bake for 12 minutes. Space them about 2 inches apart.
8. Once baked, remove immediately from the pan to a cooling rack, so they don't continue to bake on the hot pan!
