Guilt-Free Waffles

Breakfast is hard for me. Ya'll I'm such a hot mess that I literally go on restaurant websites all week and drool over brunch menus, making a mental note of where I'll be spending my Saturday each week, or what menu item I'm going to recreate myself. I have never not enjoyed one of those instagram sped up videos that show obscene amounts of butter, sugar, bacon, *insert any other fatty delicious ingredient* being mixed up into any thousand calorie dish. I cannot say 'no' to bacon, fried eggs, cinnamon rolls, hot Krispy Kreme doughnuts, pancakes, chocolate, butter, better yet buttered anything, ooh and CHEESE. I mean really, the possibilities are endless at breakfast and I pretty much hit rock bottom in the choices department on most occasions if no one's there to check me! So I had to find a way out of this crazy downward breakfast spiral. And these healthy waffles are IT. The ripened banana in them and bit of maple allows me to eat these without one drop of syrup on top. Annd, for my gluten-free followers, you're also in luck, as there's no flour in this recipe. This recipe makes enough for about 4-6 waffles (depending on how deep your iron is) so we enjoy that we have enough batter to refrigerate for another morning's breakfast, as time is never on ANYONE'S side first thing in the AM!
